I started importing Champagne from Carole Noizet in 2017 and I still do. I fell for the straight forward wines and the good energy of Carole when I met her for the first time. Using Google translate to aid me with my really not so good French we had some good laughs trying to understand each other (we still do).Â
They have approximately 6 hectares in Saint Thierry just north-west of Reims. The tending of vineyards and wine cellar is done by Carole and her husband Vincent. They also have a small bed and breakfast if you want to stay over.
It’s 3rd generation Champagne knowledge that makes all this come together. Carole has been making wine with her father for a long time and although he is a pensioner he will occasionally give some advise. For example the newly added oak barrels where 2% of the Blanc de Blancs is vinified. As I understood it Carole was not too convinced about this but eventually agreed to try it. Maybe we will see more oak going forward?
Otherwise all wines are fermented in steel tanks.

Their wines are crowd pleasers and good quality. Carole is not afraid of a little dosage and that is her style. All the wines are floral on the nose and are medium bodied. The brut wines have 12-13g/L added sugar with the dosage.
So if you get tired of bone-dry brut nature you can kick back with the wines from Carole. 🙂
The Fleur de Vigne is the house signature. Caroles mom painted the flowering vine on the for the bottle. It’s a 50% Chardonnay, 30% Pinot Meunier and 20% Pinot Noir. It’s kept in the cellar for minimum 2 years before release.
The Perle Noire is a 100% Pinot Noir from Saint Thierry. At the time of writing it’s a blend of the years 2018, 2019 and 2020. Carole won a lot of prizes with this one.Â
The Blanc de Blancs is 100% Chardonnay with 2% vinified in small oak barrels. Very pleasant as an aperitif or with sea food.
She does make an Extra-brut though. Tasting the Extra-brut you will get 90% Pinot Meunier and 10% Chardonnay and almost no sugar but it shows that the grapes alone does it. The Extra-brut has 3 years in the cellar before it’s released and it has 0,4g/L added sugar.
